My Grandmother always made the most delicious thumbprint cookies. This year, I updated them for Valentines Day. I filled them with Ina Garten’s chocolate ganache piped out of a pastry bag.
(makes about 18-20 cookies)
1/2 c. salted butter
1/2 t. kosher salt
1 t. vanilla extract
1/2 c. brown sugar
1-1/2 c. flour
2 T. milk
Preheat oven to 375.
Cream the butter, salt & vanilla. Add brown sugar. Blend in milk and flour.
Shape the dough into 1″ balls and roll in the sprinkles. Place on a sheet pan lined with parchment paper.
Make depressions in the cookies with your thumb.
Bake for 10-12 minutes.
Allow to cool and fill the depressions with chocolate ganache.
