Here is an easy and quick dessert recipe. The prep work could not be easier or faster. I used fresh peaches and fresh blackberries, but you really could use any combination of seasonal fruit that sounds good to you.

Peach & Blackberry Cobbler.


1/4 pound (1 stick) salted butter

2 peaches, pitted and cut into 1″ pieces (I keep the skin on)

1 pint blackberries (cut berries in half if they are large)

1 cup flour

1 cup, plus 2 tablespoons sugar

2 teaspoons baking powder

1 cup milk (I use skim)

2 teaspoons good vanilla extract

vanilla ice cream (I use Talenti Tahitian Vanilla Bean)


Preheat oven to 350.

Melt butter in a medium saucepan until it just starts to brown. Pour half of the butter into the bottom of a pie dish. Toss the peaches and blackberries with 2 tablespoons of sugar. Place the sugar coated fruit on top of the butter in the pie dish.

In a medium bowl, whisk together the flour, sugar, baking powder and milk. Once batter is mixed, add 2 teaspoons of vanilla and whisk just until combined. Pour the batter directly over the fruit in the pie pan. Pour the remaining melted butter on top.

Place the pie pan on a baking sheet in the oven and bake for 25-30 minutes. (The baking sheet will keep your oven clean if any of the fruit juices run over the side of the pie pan.)

Serve hot or warm with vanilla ice cream.
